Chunky Golden Granola
 
  • Ingredients

    • 250g oats
    • 50g pecans
    • 60g flaked almonds
    • 75g pumpkin seeds
    • 30g coconut shavings
    • 60g dried fruit of choice (e.g. raisins, sultanas, freeze dried berries etc.)
    • 1tsp brown sugar (optional)
    • 1tsp ground cinnamon
    • 1tsp vanilla extract
    • 60g maple syrup
    • 60g coconut oil melted
    • ½ tsp sea salt
    • 200ml Dairygold Plant Based M’LK

  • 200ml Dairygold Plant Based M’LK

Instructions

Preheat the oven to 180C and line a baking tray with parchment paper.

In a large mixing bowl, combine the vanilla extract, maple syrup, cinnamon, melted coconut oil and brown sugar.

Add the oats, nuts pumpkin seeds and coconut shavings and stir well until combined.  

Tip the mixture onto the lined baking tray, spreading it out evenly. Don’t worry if the tray seems crowded, this will make for extra chunky granola!

Using the back of a large spoon press down the granola.

Place the tray in the oven and bake for 10 to 15 minutes. Be sure to check on the granola half-way through cooking, stirring it briefly to avoid burning. 

Return the tray to the oven and bake for a further 10 to 15 minutes or until the granola is a golden. 

Allow the granola to cool completely before stirring in the dried fruit. 

Serve in a bowl and generously pour over our deliciously creamy Dairygold Plant Based M’lk. Enjoy!
